2007 was a dry year compared to the 30-year average, but with slightly more rain than in 2006. The main difference was the heavy precipitation in May and June during the vines’ greatest growth period and a sharp decrease in average temperatures throughout their life cycle. Bud burst occurred in early March within normal ranges. At Ervamoira and Bom Retiro, flowering appeared between the third and fourth week of May under acceptable weather conditions and without causing blossom drop. A long and very sunny period preceding the harvest ensured an amazingly balanced fruit maturation which gave way to a harvest that progressed under the most perfect conditions. The grapes are trodden by foot in troughs. Fermentation lasts four to five days, producing an excellent extraction.

Tasting Notes:
A reddish and very opaque purple colour. Classic, with an elegant and prominent nose of violets, anise, mature red fruits and notes of dark chocolate and pepper. On the palate it is well-structured, very full-bodied and joins with a flavour of ripe but very intense fruit and energetic tannins that give it great ageing potential. A very flavourful finish that is extremely persistent and intense.
Store and Serve Advices:
Should be opened two hours before serving and decanted. Serve between 17º and 18º C. Store the bottle on its side in a cool, dry and dark place.
Food Pairing:
Served after dinner, it pairs well with cheeses from the Serra da Estrela region of Portugal, Stilton, Gorgonzola and other full-fat cheeses. An ideal accompaniment to a strong cigar.
