Winemaking:
Manual harvesting for small perforated boxes. Reception with total destemming. Soft crushing and pressing under inert atmosphere. Prolonged fermentation with controlled temperature of about 14ºC. Stage in French and American wood, with bâtonnage until filling in bottle.
