Today is International Pasta Day! It was in 1995 that a few dozen Italian manufacturers came together to do justice to what is, after all, one of the most widespread food products in the world. In fact, the pasta has been an Intangible Cultural Heritage of Humanity since 2010.
On the day in which this worldwide appreciated dish is honored, we decided to leave here some simply delicious suggestions for pairing pastas and portuguese wines. The basic rule in these cases is to balance the wine with the sauce and accompaniment chosen for the pasta.
Pasta with tomato sauce, goes well with light reds but with a strong acidity, to balance with the acidity of the tomato. A good example are, for example, the Algarve's Negra Mole monovarieties, or a refreshing Sangiovese. Palhetes and Claretes are also excellent company.
If the pasta is accompanied by the traditional Pesto, the suggestion goes for fresh and light whites, but with some aromatic intensity, able to accompany the aromatic intensity of the Pesto herbs. A Loureiro from the Vinho Verde region seems to be the right choice.
Pasta with cream-based sauces is recognized for its creamy texture and considerable fat, which calls for a wine that is able to balance this sensation. A classic unctuous Chardonnay will not disappoint.
If the pasta is accompanied by seafood, a refreshing rosé will make a perfect company, as it balances perfectly with the ingredients without being “overshadowed”.
A traditional Bolognese goes well with a full-body red, why not a Touriga Nacional from Dão? Powerful yet elegant.
Whatever you choose, a Portuguese wine will always be a beautiful companion for this dish eternalized by the Italians. Buon apetito!
