Winemaking:
The grapes are picked by hand and transported to the winery in 150kg pallets. The bunches are de-stemmed and the grapes are lightly crushed. This is followed by the alcoholic fermentation of the must, carried out in stainless steel vats, at 24-26ºC. Pressing takes place a third of the way through fermentation. This way, the wine finishes fermenting, but without it coming into contact with the skins, which translates into a smooth extraction. The 10% of Viosinho white is added to the final batch, helping to soften the palate and confer exoticism and complexity – volume and breadth of mouth. A wine that seduces with its complexity combined with low concentration. Aging in French oak vats for 8 months.

Store and Serve Advices:
Storage Lying down at a temperature of 15°C. Serve at a temperature of 12°C to 14ºC.

Food Pairing:
White meats, dishes of Asian origin, such as Peking duck, mushrooms and mild cheeses.
