Winemaking:
The grapes are stalked and sent to vinimatics, where they remain for 6 to 10 hours, at a temperature of 12ºC. Then they are pressed and sent to the cold room, where they ferment at a temperature between 13 and 15ºC. The must is packed in new Hungarian oak barrels (Tokaji), followed by a period of 6 months of bâtonnage. After the stage in the barrels it was bottled and submerged in the calm waters of the large Alqueva lake, near the bay of Amieira Marina, where it matured to 30m depth, in truly unique conditions of excellence, over 8 months.
