Winemaking:
Selective manual harvest in 20 Kg baskets, whole bunch pressing, separation of first and second presses, with only the 2nd presses being used for this wine. Spontaneous fermentation in horizontal stainless steel vats or used barrels. The 2018 harvest aged for 5 years, the 2020 for 3 years and the 2021 for 2 years.

Tasting Notes:
Citrine straw yellow colour. Pure mineral aroma, citrus with hints of grapefruit, with added complexity from the long aging on lees. Tense attack, textured but fresh with a very present minerality and acidity, good persistence and saline and brioche notes.

Store and Serve Advices:
Store at 6-8ºC, to be served at 10ºC, and drunk at 12ºC.

Food Pairing:
Fresh, very mineral and saline. Ideal partner for oysters, barnacles and bivalves. It also works with grilled fish and more complex fish involving butter.

Allergens:
Contains sulphites.
