The fine lees from decanting Alvarinho de Alvarinho are selected and placed in a spin barrel where they ferment. The accentuated turbidity of the must originates the fermentation of more closed aromas, so we have to turn the lees very frequently, hence the name “Turned”. The spin barrel allows for a total bâtonnage, managing to completely mix the lees and keep them in constant contact with the wine, so that the reduction of fine lees during fermentation is attenuated and a very delicate and mineral wine is born.

Tasting Notes:
Revirado is a complex, involving wine, which is strange and then becomes ingrained. On the nose, the aroma is closed, reminiscent of burnt phosphorus, showing the profile of an Alvarinho with some reduction. In the mouth, this wine has a markedly mineral profile due to the salinity that is felt given its origin in altitude vineyards, and a unique complexity amplified by aging in oak barrels.
Store and Serve Advices:
Recommended serving at a temperature of 10 to 12ºC.
Food Pairing:
The Revirado profile goes well with smoked and grilled fish or a salad with sea salt. It is an excellent combination with oysters and shellfish.
