The olives are handpicked and arrive at the olive press within two hours of picking. After the mechanical cold extraction, the oil is decanted into stainless-steel vats and allowed to rest for 4 to 6 months before bottling.

It is an olive oil of the highest quality and purity, with a golden straw colour and citrus aromas and ripe olives, green apple and apricot. On the palate perceives a bittersweet soft and slightly spicy at the end.
