Late Harvest - A treasure that is born from a delay

The story goes that the first harvest happened in the mid-18th century in Germany, as a result of a delay in authorizing a messenger for the grapes to be harvested, which meant that the Riesling grapes continued on the vine shrunken and dried out.
The monks who produced wine in the Rhineland decided, despite their frustration, to go ahead with the harvest, and to everyone's surprise, this resulted in a sweet, liqueur and charming wine.
It is difficult to say where production began in Portuguese territory, it is said that the first harvests were born in the Douro, but currently in Portugal you can find this style of wine from North to South and with the most varied types of grapes, which, like as the name suggests, they are harvested later, between October and December, causing them to increase the sugar levels, which is called the “grape berry postharvest dehydration”, which allows for new aromas to show up like quince, honey, tangerines and flowers.
This style involves a careful selection of grapes, ensuring that only the healthiest ones are used, where they are gently pressed so that all the juice is extracted and fermented.
It should be served between 10ºC and 12ºC, and it’s the perfect pairing to desserts or appetizers.
