Grapes harvested in 15 kg boxes and gently pressed after a short maceration. Fermentation in used French oak barrels in lees with “bâtonnage” for 12 months. Aging for 36 months in the bottle, on the lees, before the "remuage" and "disgorgement" were made.

Tasting Notes:
Aroma of bread and buttery notes, with ripe apple. A mouth with delicate mousse, very fine bubble, notes of brioche and dried fruits, complemented by the buttery notes of the Chardonnay variety. Very refreshing and long finish.
Store and Serve Advices:
Bottles should be kept horizontal, at a temperature of 12ºC and 60% humidity. Service temperature between 8ºC and 10ºC.
Food Pairing:
Goes well with roast suckling pig, smoked salmon, foie-gras, oysters, lobster and strong Roquefort-style cheeses.
