Winemaking: The harvest took place in October in order to ensure the grapes were fully and perfectly ripened. The grapes were picked by hand in small boxes and transported to the winery in a short space of time. The grapes are completely destemmed and partially crushed, followed by fermentation in small tanks for 3 days. Finally, the grapes are destemmed and gently pressed. Manual harvesting, malolactic fermentation in stainless steel and ageing for 5 months in stainless steel vats.
