Winemaking: Selection of the best plots for the production of this wine, with manual harvest and transport of the grapes in small batches. Vinification of the varieties separately. Gentle pressing of the whole grapes with mild soaking, decanting cold (10ºC) and controlled fermentation at low temperatures (12-14ºC). Stage on thin lees in stainless steel bowl with periodic bâtonnage for 3 months. Additional stage in bottle for 2 months.
