Winemaking:
The grapes are harvested during the least hot periods of the day, arriving at the winery fresh and intact. They are then chosen and distributed according to the characteristics that the winemaking team desires for the brand. Fermentation takes place in stainless steel vats with temperature control, after a long period of pellicular maceration. At the end of fermentation comes the twist: aged for 12 months in custom double casks. The top and bottom are French oak, for subtle spice, while the long side planks are American for vanilla notes.
