Stemming, crushing and pressing, followed by decanting and first fermentation in stainless steel vats at temperatures below 16ºC. The second fermentation took place by the classical method, also called fermentation in the bottle. Staging for 12 months after the second fermentation and 2 months in the cellar after disgorgement before being released to the market.
