Winemaking:
After the reception of the grapes and their qualitative control, they are disengaged and crushed. Then the crushed grapes are placed in the fermentation vats, remaining under maceration for a day at low temperature, thus extracting much of the aromas present in the films of the grapes. In the ideal moment the fermentation is interrupted with the addition of wine spirit resulting in a naturally sweet wine. The wines then pass through a period of aging and after the first passages are cleaned in winter, are placed in oak vats for a minimum of 1 year, the rest of the aging in stainless steel. Later the winemaking team chooses the wines that will constitute the final lot in order to maintain the characteristic style of the White Monge.

Serve chilled, between 6° and 10°C. Store the bottle upright, in a cool, dry and dark place.
