Reception of the grapes in boxes of 20 kg, followed by total destemming and slight crushing. Afterwards the masses were transported to the lagar where the traditional foot treading occurs, and also where the alcoholic fermentation took place, during 11 days with controlled temperature. After the alcoholic fermentation the wine was transferred to barrels used by gravity, and here the malolactic fermentation was carried out followed by an aging stage for 10 months.

It pairs perfectly with hot dishes, whether they are traditional cuisine (game and roasted meat) or stewed meat (seasoned, white or red). It defies new harmonisations, including with fish, being the choice of the garnish a prominent element for the pairing: rich dishes with the earth/sea confrontation. Another small trick is to use some preparation of red wine in the dish.
