It's a wine that shows great character, with mineral and smoked aromas very present. “Os Xistos Altos” have also has fresh aromas of white flowers and fruits but also juniper, one of our local plants. In the mouth this wine is “salty” and mineral very characteristic of Rabigato. It’s elegant and complex, with concentration and firm acidity from the entrance to the end and finishing with great persistence. Great ageing potential.

Winemaking:
The grapes come from our highest parcels of Rabigato at 500 m (“Os Xistos Altos” means “The Highest Schist’s”) in the Douro Superior. They are harvested manually in September in boxes of 20 kg. In the cellar before being pressed, they spend 12 hours on a cooling chamber at 10ºC. In the winery the grapes are crushed directly to a vertical press which makes long and soft pressing. The must from pressing goes by gravity into a subterranean concrete tank. On the next day the must goes to a 2.000 L french oak barrel and also to a 600 L concrete “egg” were ferments with indigenous yeasts. The maturing process in takes 20 months.
