The grapes for this wine were received at the winery in small 20 kg crates, and were off-loaded directly into the pneumatic press. The must, duly protected from oxidation through the use of inert gases, underwent static decantation at low temperatures for a 24-hour period, in order to reach the required level of clarity. Fermentation took place in stainless steel tanks for about 20 days at temperatures no higher than 16ºC. The making of this wine tried to recapture the traditional winemaking techniques of the region. These traditions involved the maturation of white wines for long periods of time in large, old oak casks where they experienced different weather conditions. Quinta dos Carvalhais White Especial is made up of wines from three different years - 2004, 2005 and 2006, with an average of 8 years of ageing in 225-litre oak barrels which also have a variety of ages. During this period any type of intervention was avoided as far as possible. Thereafter, the wines from the different barrels were tasted one by one, and those that showed the best development potential, given the weather conditions, were selected for the final blend.

With a very bright golden appearance, Quinta dos Carvalhais Branco Especial is a sophisticated and very complex wine. Its bouquet has a prevalence of powder, truffle, some honey and dried fruits, as well as oak hints and warm spicy notes. It is a dense and close-knit wine and has a complex palate with a wide aromatic range. Its acidity is lively and very well-balanced with layers of aromas and oak notes from the years this wine matured in barrels. It is fantastically full-bodied and has an elegant finish.
Store and Serve Advices:
This wine should be served at 16ºC. Given its specific characteristics it should be decanted prior to serving, so that it may breathe slightly. Once open, it should be drunk immediately. However, it may be kept for 2 to 3 days in the refrigerator providing it is well-corked.
Food Pairing:
Quinta dos Carvalhais White Especial is a very gastronomic and versatile wine. It may accompany oven-steamed fish dishes, well-seasoned fish or cod. It goes equally well with game, more complex red meat, such as roast kid, or even a mushroom rice.
