Each variety is made separately, respecting its optimal period of maturing to produce the intended style. With the fermentation started in stainless steel vats, only 35% of the Semillon grape variety concluded its fermentation in French oak barrels, followed by six months of ageing with ‘bâtonnage'. 35% of the must ferments and ages in new French Allier oak casks.
