Winemaking:
On arrival at the winery, the grapes underwent full de-stemming and were softly crushed, followed by fermentation and maceration through pumping-over in stainless steel tanks at a 28ºC controlled temperature for about 15 days. When the required organoleptic balance was achieved, the free-run juice was set aside and the must was softly pressed. A wine of great quality and elegance was achieved, dominated by primary notes of fruit, with great expression of the local grape varieties. Following malolactic fermentation the wine matured for about a year in used French and Caucasian oak barrels. The final blend was prepared from a qualitative selection arrived at through numerous tasting sessions and analyses carried out during this period, which made it possible to choose the best wines by barrel and variety. In order to preserve the highest quality, this wine was bottled without cold stabilisation, which may cause it to throw a deposit during ageing.

Store and Serve Advices:
The bottle should be kept horizontally in a dry and cool place, sheltered from light. It should be served at a temperature between 16ºC-18ºC. This wine should be drunk immediately after opening.

Food Pairing:
Ideal with meat and soft cheeses. It may, however, also be enjoyed on its own as an aperitif at the start of a meal.
