This site is perfect. We holiday in Madeira regularly and have always found it frustrating to have access to good wines at reasonable prices whilst away. Winemaking:
The whole grapes bunches, harvested on August 31, 2017, with about 18% probable alcohol, were first put through a carbonic maceration process for 7 days in an atmosphere saturated with carbon dioxide at a temperature of about 30°C. After this period, where a rst enzymatic fermentation took place inside the grape which gave rise to about 1% alcohol, the grapes were transferred to a pneumatic press and subjected to pressing in order to release the wort. This wort was then subjected to alcoholic fermentation in a temperature controlled vat at about 16°C, and the fermentation was stopped when it reached about 11.5% vol., with the wine having about 120 grams/liter of residual sugar.

Tasting Notes:
Descarada is a sweet wine, produced in a year in which very high temperatures occurred during the maturation period, which is the reason the grapes reached a high concentration of sugar. Because the harvest happened in the end of August, it presents a high acidity, which contributes for the excellent balance between its acidity and its sweetness, creating an “early harvest” wine. It presents banana and white fruits aromas, with a very pleasant oral component, excellent for accompanying sweets and fruit.

Store and Serve Advices:
It should be served at a temperature of 6ºC to 8ºC.
