Manually harvested on 11 November 2004 from bunches partially (up to 80%) attacked by Botrytis cinerea fungi. Full destemming followed by very soft pressing and cold clarification process. Fermentation at 16°C arrested by cold storage at a density of 1020.

Tasting Notes:
Colour Golden. Aroma Complex aroma on the nose with hints of pear and orange zest comfit and notes of vanilla and spices. Palate Feels very unctuous in the mouth, with strong sweetness balanced with good acidity. Very long lasting after taste with a very intense aroma in the mouth.
Store and Serve Advices:
Storage Store the bottle on its side at a constant 15°C. Serve chilled to 10°C.
Food Pairing:
Foie gras, chocolate sweets, fruit tarts, and Serra cheese.
