Winemaking:
This fresh white wine comes from the Douro Valley in northern Portugal. It is produced from grapes grown in the cooler, higher vineyards where white grape maturations can be more even and homogeneous. The winemakers aim for a balanced flavour extraction. The result is a zesty, aromatic wine showing tropical fruit and refreshing crisp acidity. Made by the Symington family, producers in the Douro since the 19th Century. Grapes sourced from Quinta da Fonte Branca near Lamego, and selected growers in the Alijó and Favaios areas. Vinification took place at the Symington family’s modern Quinta do Sol facility, which is equipped with state-of the-art winemaking technology. The grapes were softly crushed after de-stemming, and some contact with the skins followed, in order to extract desirable aroma compounds. Fermentation got under way in stainless steel vats (20 tonne capacity) at a controlled temperature of 14-15ºC, for maximum retention of the primary aromas. 5 months in stainless steel vats with minimal contact with oxygen in order to retain all the aromatic freshness of the wine.
