Manual harvest into 12 kg boxes. At the winery, the grapes underwent manual selection on a vibrating sorting table. Fully destemmed and lightly crushed. Foot trodden in traditional stone open fermenter (lagar) with indigenous yeasts. Ageing for 9 months in clay pots and three months in the bottle.

Tasting Notes:
Golden /amber colour. Subtle aromas of flint, chalk and wet rock. The palate shows a dry, fresh and mineral dryness. A remarkable acidity that enhances the whole salty and structured profile.
Store and Serve Advices:
Store in a cool dark place (12 a 14ºC), on its side with a minimum of movement. Possible to keep until 2024. Serve at 11 a 14ºC.
Food Pairing:
Pairs beautifully with hard cured cheeses, fatty fish, Asian style food, poultry, pork and veal.
