Soft pressing and decanting for 12 to 36 hours under controlled temperatures 12ºC - 16ºC. Fermentation till 15 days under controlled temperatures 16ºC – 18ºC. To this fine and aromatic wine it's added yeast and liqueur, fermenting on the bottle for 12 months under controlled temperatures 10ºC – 12ºC. Maturation in stainless steel vats under controlled temperatures and regular movement of the lees during 3 to 6 months. Ferments in the bottle for 12 months before the disgorgement.

Limpid and citrus colour, the mousse is delicate and fine and a persistent crown. The nose is bright and appealing with fine tropical fruits aromas and light floral notes.
