Winemaking:
Grapes harvested in a state of over ripeness with the clear objective of strengthening the fruit notes and taming the tannins of the grape variety. Total destemming, pre-fermentative cold maceration, stainless steel fermentation at low temperature and post-fermentative maceration. Stage of 8 months in new French oak barrels (50%) and 2nd year American oak barrels (50%). Stage in bottle 4 months before being placed on the market.

Full bodied, fleshy with excellent acidity, black fruit, balsamic notes and some spice, well integrated wood.
Store and Serve Advices:
Storage Lying down at a temperature of 15°C. Serving at a temperature from 10-11°C.

Ideal accompanying all fish dishes, seafood and some lighter meat dishes.
