Winemaking:
Grapes harvested by hand in small boxes, with a large selection in the vineyard, only the bunches being harvested in perfect ripeness and health condition. Total destemming. Smooth pressing of the whole grape. Gravity transport of the wort to the vats. Clarification of the must by cold. Long fermentation at controlled temperature. Aging for 9 months on fine lees with regular bâtonnage for the first 3 months.

Tasting Notes:
Nose closed. Noble citrus (light tangerine peel) wrapped in strongly mineral notes. Mouth with greasiness and texture, full of minerality combined with notes of tangerine peel. Long and complex finish with a very balanced acidity.
Store and Serve Advices:
Should be served at a temperature between 10/12ºC. Keep the bottles laid down when it’s possible and in a room with controlled temperature.
Food Pairing:
Very gastronomic wine. It can accompany cheeses as well as cod dishes.
