It pairs perfectly with hot dishes, whether they are traditional cuisine (game and roasted meat) or stewed meat (seasoned, white or red). It defies new harmonizations, including with fish, being the choice of the guarnish a prominent element for the pairing: rich dishes with the earth/sea confrontation. Another small trick is to use some preparation of red wine in the dish.
