After the grapes are received and their quality control is carried out, they are disengaged and crushed. The crushed grapes are then placed in the stainless steel fermentation vats, remaining under maceration for a few days at controlled temperature, in order to extract to the maximum the best constituents of the films. In the ideal moment the fermentation is interrupted with the addition of wine spirit resulting in a naturally sweet wine. The wines with the greatest potential for aging in wood are then selected and placed in very old oak barrels after the first winter. For several years they remain in wood gaining harmony and improving their bouquet. Later the winemaking team chooses the wines that will constitute the final batch using wines with more than 10 years of aging.
