Winemaking:
Selective manual harvest in 20Kg baskets. The bunches are carefully selected on a sorting table and then the grapes are gently crushed and transported to the fermentation vats without the aid of pumps. Here it is macerated for 3 to 6 hours at low temperature and the resulting sangria ferments spontaneously at 12ºC in order to maintain all its aromatic potential.

Tasting Notes:
Light pink in colour with hints of cherry, it has a very intense nose of ripe strawberry, married with hints of iodine and black pepper. In the mouth it is surprising, it is textured, saline, but fresh, with the salts persisting and stinging the palate. It's a Volcanic Rosé.
Store and Serve Advices:
Store at 6-8ºC to be served at 10ºC, and to be drunk at 12ºC.
Food Pairing:
Rosé fresh, elegant and saline like few others. Ideal partner for fish dishes, seafood and salads. It has volume and structure for white meat dishes. Perfect for Indian, Thai and Sushi food.
