Winemaking: Quinta do Vallado Prima differs from the typical Moscatel due to his dryness. This wine is made with 30 years old Moscatel vineyards. Before fermentation take place the moist was kept together with the liquid, a technique called Skin Contact. Fermentation, using the process called "bica aberta", lasted for nearly one month with temperatures varying between 14º and 16ºC. The wine was kept for 3 months in stainless steel vats.
