From vineyards with about 25-30 years old, planted on schist soils, grapes are harvested by hand and transported in small boxes of 25 kg. After stalk removal and soft crushing, the grapes were pressed (pneumatic press), the wine was fermented and then defecated, partly in new barrels of French oak, partly in stainless steel tanks at low temperatures, both with controlled turbidity. After fermentation in new French oak barrels of 225 liters, the wine aged in barrels for about 6 months. Then the batch is made. The wine was stabilized and filtered.
