Harvest for boxes of 20 kg, done manually and at the optimum point of maturation of the grapes. Rigorous selection and choice of bunches and berries held on 100% of the grapes. Soft pressing with whole bunches, fermentation of part of the batch in French oak barrels, with subsequent assemblage with the remaining batch, in stainless steel tanks of small capacity, at 15ºC. Fermentation and bottling stage for 2 years and disgorgement in February.

Tasting Notes:
Citrus yellow colour. Very Atlantic profile, with very mineral and fresh notes. Good volume with a very elegant bubble. Intense and refreshing finish.
Store and Serve Advices:
Store the bottle on its side at a constant 15 °C. Serve chilled to 8 °C.
Food Pairing:
Excellent as an aperitif, and with light meals and roasts or even desserts.
