Minimalist, using automatic granite presses. After fermentation, the wine is placed in stainless steel vats to clarify naturally. After malolactic fermentation, the wine is moved to French oak Seguin Moreau barrels, resting for 6 months. It’s then bottled after a slight fining and filtration. As it was stabilized by the natural frost of two winters, a thin deposit might be formed over time which won’t damage the quality of the wine.
