It is made in such a way as to be a true rosé and not the result of a sangria of red grapes. Selection of grapes on the carpet of choice at the entrance of the cellar. Pressing of whole grapes (technique "blancs de noirs"). Targeting the wort down pH value. Static decanting. Fermentation at low temperature (12º - 13ºC) for 22 days. Early bottling for preservation of aromatic richness. 4 months in stainless steel.

Tasting Notes:
Beautiful pink colour - pale, bright. Intense aromas of semi-green raspberry and gooseberry combined with wild and savoury mint. Delicate structure, semi-solid texture, intense, fresh, transparent, good complexity, mineral notes. Equilibrium well achieved by the conjugation of moderate acidity with the fresh and focused fruit and the average concentration. It ends very long and very accurately.
Store and Serve Advices:
Recommended serving at a temperature of 8 to 10ºC.
Food Pairing:
Excellent with lean grilled meat, pasta, pizza and ideal with aperitifs. Also goes well with tapas, sushi, risotto and highly seasoned fish.
