Winemaking:
The hand picked grapes were brought to the winery and sorted. The delicately crushed and pressed berries were then fermented with temperature control up to 18ºC. After fermentation they were aged for two months on fine lees.

Tasting Notes:
A full nose of tropical fruits backed with some citrus, reminiscent of pear, passion fruit, and lemon zest blended with a touch of white pepper. This smoothly textured medium to full bodied white exacerbates limoncello, fine minerality, and a clean citrus flavour that lingers on and excites the taste buds.
Store and Serve Advices:
The bottle should be kept horizontally, in a cool and dry place, sheltered from light. Although it may be enjoyed immediately, it is likely that it will reach its peak between its 5th and 10th year. It should maintain its quality for about 20 years. If kept for some years, it is natural that this wine will throw a deposit. It should therefore be opened with care and decanted for the best enjoyment. It is a surprising wine and is enhanced if opened some time before serving. Serve between 16ºC-18ºC.

The elegant and complex profile of this wine makes it ideal with fine meat, game dishes and intense cheeses.
