Winemaking:The grapes come from a century-old vineyard at Quinta do Caêdo. The grapes are sorted by hand in the vineyard and on the sorting mat at the entrance to the winery. After destemming and gentle crushing, the grapes are sent to stainless steel vats where the alcoholic fermentation takes place. A long, gentle, temperature-controlled maceration takes place to extract the compounds that express the terroir of the vineyard. The wine is matured in French oak barrels for around 30 months. During this period it is subjected to numerous tastings and analyses in order to monitor its evolution. In order to preserve the highest quality, it is only lightly filtered before bottling.

Tasting Notes:
Deep ruby colour. Intense and complex aroma, with ripe black fruits, balsamic notes, heather, resin, sous-bois, spices such as pepper, stony and well-integrated good quality wood. On the palate, the wine is dense and voluminous, with excellent tannins and refreshing acidity, notes of black fruit, spices and truffles, culminating in a finish of great elegance and persistence.
Store and Serve Advices:
Despite being extremely drinkable at point of release, this wine is expected to remain in fine drinking condition for around 20 to 25 years. As the years go by it may throw a deposit. The bottle should ideally be stored on its side, in a cool, dry place.

Goes well with strong-flavoured dishes such as game.
