After manual harvest in the last days of August, the grapes had a few hours of maceration at low temperature in the pneumatic press. Fermentation occurred in small stainless steel vat at low temperatures (15-16º) for 18 days in order to enhance the fermentation aromas of passion fruit, green apple and citrus. No aging or fermentation in barrels.
It features a lush and persistent set of citrus and passion fruit aromas. In the mouth it has excellent acidity and a distinctive mineral touch that extends until the end.
Store and Serve Advices:
It should be consumed between 10 to 12ºC.
It is ideal when served as an aperitif, to accompany starters or fish dish.
