Winemaking:
After de-stemming and gently crushing the grapes, a brief maceration on the skin allows to optimize the extraction of desirable aromatic compounds and precursors. Following clarification, the must is fermented in stainless steel tanks, with a controlled temperature between 15 and 17°C. Winemaking in a reducing environment continues for the following aging period, avoiding contact between the wine and oxygen as much as possible, until bottling, in order to preserve the primary aromas that prove to be essential in consolidating the overall profile of this wine. Aging in stainless steel vats, until bottling.
