Grapes were hand-picked and selected from the highest areas of Quinta do Sairrão vineyard and on arrival at the estate. Thereafter, they were softly crushed along with the stems in a pneumatic press, with the free run juice being separated from the first pressings. A long cold-decanting followed, after which alcoholic fermentation took place, induced by selected yeasts at controlled temperatures of between 12ºC and 16ºC. During the period of time between alcoholic fermentation and the preparation of the final blend, the wines which make up Vinha Grande Rosé underwent numerous tastings and a careful selection. The final blend was bottled after clarification and matured in the bottle before being put on the market.
