Grapes are harvested manually and transported in 30 Kg trays. Temperature controlled fermentation with pumping over and extended maceration. Matures in new American oak and French “Allier” oak casks (300 Litres) for 18 months, followed by a fining period in stainless steel vats until bottling date.

Tasting Notes:
Full red colour. Rich and lovely balanced aroma, dry cherries, chocolate and a touch of tobacco. Marvellous complexity and depth, extraordinary balance, ripe tannins and a lasting finish.
Store and Serve Advices:
Serve at room temperature (18ºC/64ºF). We recommend previous decanting one hour before serving.
Food Pairing:
It is ideally suited to all meat and game dishes, and a variety of cheeses.
