After pressing, the wort, suitably protected from oxidation by the use of inert gases, was subjected to static decantation at low temperature for a period of 24 hours in order to achieve the desired degree of clarity. It was then sent to a stainless steel vessel, where selected autochthonous yeasts were added in the farm. Part of the Crumble wort was fermented in used French oak barrels, and the rest remained in the stainless steel vat. Verdelho's must has been fermented in stainless steel. The fermentation took place at 18 ° C for a period of about 20 days.

Tasting Notes:
In the aroma citrus fruits such as lime are very present, nuances of white fruit and slight vegetable notes, in a set in which the almost imperceptible wood confers complexity. In the mouth stands out the good volume, freshness and structure, allied to the wood very well married, in a long finish. It is a subtle and gastronomic white, in which the fermentation with the autochthonous yeasts comes to exalt the Dão terroir.

Serve between 10ºC-12ºC.
