This Jaen fermented only with indigenous yeasts in cement vats with 35% of the whole bunch followed by 30 days of cuvaison. After aging the first winter in cement, it spent six months in a French oak vat. Naturally stabilized.

Tasting Notes:
Open red colour with mineral and earthy character, light pepper and delicate fruit. It shows elegant tannins and is marked in the mouth by granitic minerality, which often contributes to its more peppery side. Long and precise acidity. With the potential to turn out to be different in a few years.
Store and Serve Advices:
Bottles lying horizontally in an airy and dark place, between 12 and 13ºC. Should be served at a temperature of 15 to 17ºC.
Food Pairing:
Combine with strong meat dishes, such as lamb, varied game dishes or sausages. Also very good with strong cheeses and fatty fish.
