Produced from typical Dão grape varieties, from an old vine with about 60 years. Mixed varieties of red and white grapes, in the proportion of 80-20%. Manual harvest at the end of September. The winemaking was done in a “wine press” with the different grapes all mixed. Smooth steps on foot to crush the grapes on the first day. Natural fermentation (without the addition of yeast). In one of the mills, we used dried chestnut flowers - a few grams were added to the grapes when they entered the mill); in the second tank, we add a few grams of sulphites. After fermentation, the wine was pressed and aged in stainless steel vats for 12 months - we used separate tanks to see the difference between the tank with sulphites and the tank with chestnut flower. In the end we decided to make a blend (a cut) with the wines from both deposits.
