The great sparkling wines of Távora-Varosa, Champagne style

This small demarcated region gained notoriety due to its sparkling wines, produced since the 17th century by the Cistercian monks. A region of great continental influence, with hot summers and harsh winters, it was the first Portuguese region demarcated for the production of sparkling wines.
As a rule, they are very aromatic, with a fine and persistent bubble. In the mouth they are fresh and very fruity. Even the older ones, classified as Super Reserva, manage to maintain their light and fruity character, perfectly combined with the aromas of the autolysis of the yeasts.
Due to their excellent acidity, they are great company for a variety of meals, from cold starters to more fatty dishes and desserts, but their complexity and sufficient flavor also allow them to be enjoyed without any gastronomic accompaniment.
