International Chocolate Day: wine pairing suggestions

Chocolate and wine is an irresistible combination, and it seems that nothing can go wrong when the two are put together, however it's not quite like that… Today, international chocolate day, we have some suggestions for you to make perfect combinations.

For chocolates with a high sugar content, such as milk and white chocolates, the wine should have at least the same level of sweetness. Otherwise it will create an unpleasant aftertaste.

Therefore, for milk chocolates we suggest, for example, Late Harvests, which harmonize with the same level of sugar, but usually have a high acidity to balance. Another perfect combination is this type of chocolate with Madeira wines from the Malvasia variety, the sweetest category, that has some salinity which makes a perfect pairing.

For white chocolates, we suggest fortified wines from the Moscatel variety, but a bolder combination with sparkling wines made from the same variety is also possible. A surprising but interesting combination, as the acidity will help to hide the fat present in this type of chocolate.

Chocolates with a higher concentration of cocoa, above 65%, can eventually accompany dry wines, as the tannins of both (yes, cocoa also has tannins) complement each other. A risky but pleasurable combination that can be made with Tannat or Syrah monovarietals.

If you don't like such audacious combinations, you can go for an LBV Port or a Ruby Reserve. In this case, the harmonization is by contrast and not by similarity. And the results of the two matchings are completely different!

The combination of filled chocolates must be made from the flavour of the filling. In other words, a chocolate with orange goes well with wines with hints of candied orange, like a 10-year-old white port, but a chocolate with nuts or caramel will be great company for a Tawny Port.
