The sparkling wines have a long tradition in regions such as Bairrada, Beiras, Douro and Dão and in fact there is a demarcated region for spakling wines called Tavora Barrosa, in the border between these regions.
Now-a-days you can find sparkling wines in all the wine regions and all share in common the classic champagne method with the second fermentation in bottle.
The sparkling wine was traditionally used in special occasions and served as an aperitif or to pair desserts so the typical ones were the medium sweet, sweet or the dry sparkling.
In the north of the country some typical plates were served with the red sparkling and the most common example was the “Leitão à Bairrada” paired with a Murganheira red sparkling.
Now you can find another category of sparkling wines, the dry rosés, that is growing a lot because it’s a perfect wine to paid with most type of foods.
It’s a trendy sparkling wine mostly because of the color and bottle image but also because it pairs greatly with some popular cousins such as the Italian, Japanese and most of the Oriental ones.
