Produced from the Baga and Merlôt variety, the grapes are picked at the ideal state of maturation and then fermented in a stainless steel tank at a controlled temperature and aged for six months on fine lees and subjected to regular batonnage.
After a second fermentation it takes on a pinkish colour with a salmon hue with a fine and persistent effervescence. The aroma is fresh with flowery wild berry notes. The sensation in the mouth is one of creamy mousse with a live and balanced acidity.
Store and Serve Advices:
Store the bottle on its side at a constant 15 °C. Serve chilled to 8 °C.
Especially recommend to accompany starters, caviar, and fatty fish.
