Is a wine produced only with grapes from Quinta de Baixo vineyards, where the producer practices only organic viticulture. The VV comes from centuries-old vineyards, with Maria Gomes and Bical, planted in a mostly limestone terroir. Given the high natural acidity that these vines provide, with a pH below 3.0, it is possible to carry out malolactic fermentation, which occurs in 1000-liter Fuders over 60 years old, coming from Mosel. The VV represents the incredible lightness and complexity of Bairrada.

Tasting Notes:
Light in citrus colour, with the usual vibrant, expressive but austere register. The mineral notes of limestone are very evident, in harmony with aromas of fresh herbs, lemon and white flowers. Bical's austere and mineral profile is very balanced with the expressiveness of Maria Gomes. In the mouth, impresses by the lightness, although full-bodied and with a lot of personality. The acidity and salinity elevate the wine to a unique, fresh, very fine and elegant level. Vertical, direct and with an austere and deeply mineral aftertaste. A very serious, distinguished white that should be drunk in Burgundy glasses.
Store and Serve Advices:
Should be kept in a cool and shady place. Perfect serve at 12º.
Food Pairing:
Seafood dishes, baked fish and cod dishes. It accompanies Japanese-inspired dishes very well, with alkaline and iodized flavours (such as Nori seaweed). Suitable for vegans and vegetarians.
