After full de-stemming and soft crushing fermentation and maceration ensued through pumping-over in stainless steel tanks at a 28ºC controlled temperature for about 6 days. This was followed by an extended 10 day-long post-fermentative maceration, so as to increase aromatic and polyphenolic extraction. The wines were transferred separately to new and one-year old French (70%) and Caucasian (30%) oak barrels where they matured for about 12 months. The final blend was prepared after numerous tastings that made it possible to choose the best wines from the best barrels. Bottling was followed by maturing in the bottle at a 15ºC controlled temperature for about 12 months, so as to achieve a suitable balance. Since this wine was bottled without ultra-cooling, so as to preserve its high quality, a slight deposit may develop during maturation in the bottle.
Great intensity and aromatic complexity dominated by components of very mature black fruits (blackberry, raspberry and black plum), enriched by notes of menthol, dark chocolate, black pepper, and tobacco. Dense in the mouth, with firm tannins and high quality, balanced acidity and intense, long and complex finish.

Serve between 16ºC-18ºC.
